Louisiana Creoles: Who are we? Are there different types of "Creoles?" How are Louisiana Creoles and their culture different from the other Creole cultures of the world?

When did the "Cajunization" of south Louisiana begin and why? Was Mardi Gras Cajun, or French Creole? -Education is the only light, in an otherwise darkened mind!
